Fried Spagetti

This was inspired by the need of feeding my family a healthy breakfast besides the normal bread, cereals, yogurt combo. :p

Fried Spagetti

Ingredients
3/4 Spagetti pack
2 Cups Taugeh (Beans sprouts)
4 pieces of Fish Cake sliced thinly
1 punnet of Mushrooms (fresh - any kind you like)
1 piece of Fried Taufu (thin type) sliced thinly
2 Eggs (Omellete style for garnishing)

2 Tbsp Soya Sauce
1 Tbsp chopped Garlic
2 Tbsp Olive Oil
1 Tbsp Oyster Sauce

Method
1. Boil water to cook the spagetti & set aside.
2. Fry the eggs into an omellete. Slice & set aside for garnishing.
3. Fry the sliced pre-fried thin type of Taufu & the sliced Fish Cake. Once brown a bit, set aside. Fry the chopped garlic with mushrooms & add Oyster Sauce.
4. Next add the Taugeh (Beans Sprouts) & stir fry for 30 seconds & add the spagetti, taufu & fish cake. Fry the spagetti until everything starts to be fragrant, then it's ready to be served.

Add soya sauce to taste. Garnish with egg.

Feeling Good after a Slow Start to the Day

Started my day in slow-motion... restless heart. Thinking-thinking :

should I try to get the bread flour in the morning?
should I call HY and see if she's home for me to drop by for a chat & share my Choc Chochip Muffins with her?
should I rush home to bake another batch?
should I go deposit cheque?

Aaaahhhh! Questions - questions!

Ended up :

Sms HY to ask how SY is doing coz he was having a fever 2 days ago.
Depositing Cheque
Stayed home to cook my Stew & whip up lunch.

Felt Great with my Pork Rib Stew was cooking & the aroma of spices started to fuse together :)

Felt Great when I "innovated" all the left overs together

Felt Great when the pork stir-fry with Plum sauce tasted really appetising for the kids.

Friday lunch with the kids

Felt in the mood to whip up some quick & yummy lunch for the kids, myself & MIL. I really wanted to have something cooked with Potato ~ Tried my very own Warm Potato Salad. ;) I used Tatar Sauce instead of Mayonese (my mayo expired already :p). Served it with Macaroni "Kon Lou" style ~ my son's favourite & fried some Alpha Nuggets. We had left over Steamed Yam Cake which I pan fried it.

Baked Pasta & Baby Portebello Mushrooms

It's been a long time since greenhoihoi has been over to my place (due to lack of transport). So I was thrilled to have her & her 2 boys over for our usualy Friday chit-chat & playgroup meet. I decided to whip up a Baked Pasta.
Ingredients
1 Bottle Leggo's Baked Pasta Sauce

300g Minced pork/beef/chicken
2 Saugages
4 Crab sticks
1/2 Carrot - chopped finely (to get my son to eat his veggies mainly)
1 Red Onion
1 Tbsp Garlic = chopped
3 Cups of uncooked pasta - to be cooked as instructed
Grated cheese

Method
1. Preheat oven at 180'C


2. Cook pasta as directed on the package and let it drain.


3. Use Olive oil to stir fry chopped garlic, onions, carrots, mince meat, & crab sticks. Then add the Pasta Bake Sauce & stirring occasionally until meat is cooked.


4. Layer your pasta in an oven proof bowl (Pyrex) with the sauce mix. When you reach the top, pour in all the sauce mix and decorate the top with the sausages. Sprinkle as much cheese as you like.


5. Put in your pasta & allow it to bake at 180'C for 20 minutes or till the cheese turns a bit brown.


Half eaten already :)


The other dish I decided to whip up was Baked Baby Portebello Mushrooms! I just couldn't resist buying them from Cold Storage when I was doing my grocery shopping.



1 punnet of Portebello Mushrooms - remove the stems & give it a quick rinse. Lay them on your oven proof dish. Sprinkle Olive Oil, crab stick shreds, diced sausages & loads of grated cheese (whatever toppings you like).

I baked them together with the Pasta at 180'C but only for 5-10mins... the mushrooms would be cooked by then.

Fasta Pasta Vegetarian


I managed to whip up a delicious & nutritious lunch today. It was all cooked with left over veggie & pasta sauce (love the Leggos Primavera flavour) in the fridge & a can of button mushrooms.
I do hope to make more effort in my lunches being healthy.
